Judging Criteria
Every nominee is evaluated by our panel against six considered standards, weighted to reward both tradition and ambition.
- Cuisine & Flavour — authenticity, balance of the five flavours, quality of ingredients, fermentation and execution from banchan to centrepiece.
- Service & Hospitality — warmth, knowledge and attentiveness, and the grace with which staff guide guests through the meal.
- Ambience & Setting — the atmosphere, design and comfort of the dining room, and how well it expresses the restaurant's character.
- Consistency — the reliability of quality across dishes, services and visits, and the discipline behind it.
- Innovation — creativity in menu, technique or presentation that pushes Korean dining forward without losing its soul.
- Guest Experience — the overall impression, value and emotional resonance that make diners return and recommend.
