Judging Criteria

Every nomination is assessed against six pillars by our panel of chefs, restaurateurs and hospitality specialists. Our award categories share this rigorous, transparent framework, and you can explore the wider field across our sector awards.

  • Cuisine — the originality, flavour and execution of the food, judged on both ambition and consistency on the plate.
  • Service — the warmth, intelligence and choreography of hospitality, including inventive front-of-house thinking.
